別讓“菜英文”太張狂

曾看到一則新聞，標題是：“臺中市的‘菜英文’出了大洋相”。我知道，臺灣有個“蔡英文”，臺北人，民進黨黨主席，因為不愿放棄“臺獨”主張，聲譽不佳。但此人姓“蔡”而非“菜”，難道在臺中市還有個“菜英文”？“菜英文”因何出了大洋相？閱讀新聞后才知道：臺中市環保部門印制的英文公函錯誤連篇，如Envelope（信封）詞尾少一個e，Taichung City（臺中市）的y變成了V，等等，遭致一片罵聲。有人說：臺中市的“菜英文”盡出洋相，給臺灣丟了臉。原來新聞標題用了諧音修辭，“菜英文”即水平很差的英文。“菜”為網絡用語，是“差”“笨”“愚蠢”的意思。

其實，大陸也有“菜英文”，也在各地出洋相。北京首都機場曾有一個專賣店，英文牌子是“Ants and Crafts”。據說，某國外游客來中國，看到該店店名十分感慨，中國真了不起，還有專賣螞蟻的地方。結果走進去一看，沒發現任何螞蟻，全是手工藝品。原來，店名將“Art”(工藝品)誤成了“Ant”(螞蟻)。這種差錯各地都大量存在。據報載，來華訪問的馬來西亞華人鄧先生，曾慕名前往西安秦始皇兵馬俑博物館參觀，在博物館停車場附近隨便轉轉，就發現多家商鋪牌匾英文有錯，如restaurant(餐館)誤成了rsetaurant，agency(機構)誤成了anency，jade(玉器)誤成了gade，commercial(商業)誤成了coammercial，等等。弄得鄧先生直發呆。

這些都是低級的拼寫錯誤，避免很簡單，只要端正態度，仔細翻翻英語詞典即可。最應引起注意的，是被稱為Chinglish（中式英語）的錯誤，即由于沒有準確理解英文單詞含義、用法不符合英文表達習慣或不符合英語國家文化習俗而出現的問題。

漢語中有許多同音異義詞，在把這些詞翻譯成英文時，一定要細加辨析，弄清每個含義所對應的英文，否則會出現張冠李戴的問題。我曾在超市買到一袋“小核桂圓”，包裝袋上的英文介紹將“核”翻譯成了“nucleus”。看到這個單詞，相信外國人也會暗暗發笑。nucleus雖然可譯成中文的“核”，但它指的是原子核，在說到核電站、核爆炸時常用到。桂圓等水果中的核，對應的英文單詞是pit或stone。就出現頻率而言，Export可能位居這類錯誤的首位。Export即“出口”，但它指的是“外貿出口”。許多機場、車站、地鐵、超市等公共場所，把供人行走的“出口”譯成了Export。據說，這些個“Export”已成為“國際玩笑”，常被人用來嘲笑中國的“菜英文”。其實，公共場所供人行走的“出口”，對應的單詞Exit。

英文中有一些獨特的表達習慣，不能用相關的中文意思生硬地對譯，否則也會鬧笑話。一位英國朋友來到北京某公共場所，一時內急，向一個標有restroom 的房間走了進去，結果一個女服務員走上前來和他熱情地搭話，英國朋友十分地尷尬。不過，馬上就明白了，這是休息室而非廁所。翻譯者可能認為“rest”即休息，“room”即房間，便望文生義地把restroom誤解成休息室了。殊不知在英語中restroom指的是廁所，休息室一般作Lounge。北京一家收費廁所，門口的標示牌為fee-paying public toilet。在英文中，fee-paying即付費，public即公共，toilet即廁所，有關人員便根據中文意思“硬拼”出個fee-paying public toilet來，以為它表示的意思是“收費的公共廁所”。其實，外國人看到這句話會理解成“上完廁所可以給錢”，意思是在這里上廁所非但不收費，反而會給錢。在國外，大部分國家的廁所都是收費的，一般情況下，標明toilet即可，大家都知是收費的。

許多英文單詞，除了詞匯意義之外，還有英語國家所賦予它的民族文化含義。如果不了解這些單詞背后的文化含義，而按中文意思對譯，也會鬧笑話。白象牌電池是中國著名品牌，據說它剛剛進入英語國家時就曾遭到嘲笑。因為此電池英文名稱中的White Elephant（白象）一詞，在英文中有“大而無用并且會吃垮你的東西”的含義。類似的問題，在各地的公共場所也經常見到。我曾在上海一公交車站站點見到一塊英文告示牌，上面寫著Old People First,稍懂英文的人都明白，它的意思是“老人優先”。如果真有外國年長者來乘車，看到這塊牌子一定會心里不爽。中國有“尊老”的傳統，“老”含有敬意，年長者一般是不介意被稱為“老人”（Old People）的。但英語國家則不同，他們渴望年輕，害怕“老”，如果被稱為“老人”是會產生抵觸情緒的。中文中的“老人優先”，英語一般說成Senior Citizens First(年長者優先)。再如，我們經常在大型公共場所的扶手電梯旁，看到“小心碰頭”的警示牌，許多地方把它翻譯成“Watch out，Knock Head”（當心，碰頭）。外國人看到Knock Head也會發笑，因為這是一句英文俚語，意思是“笨蛋”。“小心碰頭”就成了“小心，笨蛋”。英文是給外國人看的，是為了給外國朋友提供生活、工作上的便利，如果我們讓蹩腳的“菜英文”去接待外國人，效果可想而知。建議有關人員，多請教專家如何？建議有關部門，加大監管力度如何？

閩菜是福建菜的簡稱，它是中國烹飪主要菜系之一，在中國烹飪文化寶庫中占有重要一席。福建的經濟文化是南宋以后逐漸發展起來的，清中葉后閩菜逐漸為世人所知。

閩菜由福州、閩南、閩西三路菜組成。福州菜路流行于閩東、閩中、閩北地區；閩南菜則廣傳于廈門、泉州、漳州、閩南金三角；閩西菜則盛行于閩西客家地區，極富鄉土氣息。閩菜的風格特色是：淡雅、鮮嫩、和醇、雋永。口味偏重甜、酸和清淡，常用紅糟調味。

閩菜的特點主要表現在四個方面：

一、烹飪原料以海鮮和山珍為主

由于福建的地理形勢倚山傍海，北部多山，南部面海，蒼茫的山區，盛產菇、筍、銀耳、蓮子和石鱗、河鰻、甲魚等山珍野味；漫長的淺海灘涂，魚、蝦、蚌、鱘等海鮮佳品常年不絕。平原丘陵地帶則稻米、庶糖、蔬菜、水果譽滿中外。山海賜給的神品，給閩菜提供了豐富的原料資源，也造就了幾代名廚和廣大從事烹飪的勞動者，他們以擅長制作海鮮原料，并蒸、氽、炒、煨、爆、炸、?康確矯娑讕嚀厴！

二、刀工巧妙，一切服從于味

閩菜注重刀工，有“片薄如紙，切絲如發，剞花加荔”之美稱。而且一切刀工均圍繞著“味”下功夫，使原料通過刀工的技法，更體現出原料的本味和質地。它反對華而不實，矯揉造作，提倡原料的自然美并達到滋味沁深融透，成型自然大方、火候表里如一的效果。

三、湯菜考究，變化無窮 閩菜重視湯菜，與多烹制海鮮和傳統食俗有關。閩廚長期以來把烹飪和確保原料質鮮、味純、滋補聯系起來，從長期積累的經驗認為，最能保持原料本質和原味的當屬湯菜，故湯菜多而考究。有的白如奶汁，甜潤爽口；有的湯清如水，色鮮味美；有的金黃澄透，馥郁芳香；有的湯稠色釅，味厚香濃。

四、烹調細膩，特別注意調味

閩菜的烹調細膩表現在選料精細、泡發恰當、調味精確、制湯考究、火候適當等方面。特別注意調味則表現在力求保持原汁原味上。善用糖，以甜去腥膻；巧用醋，因酸能爽口，味清淡則可保持原味。因而有甜而不膩，酸而不淡而不薄的盛名。

著名的菜肴有：佛跳墻、醉糟雞、酸辣爛魷魚、燒片糟雞、太極明蝦、清蒸加力魚、荔枝魚肉。

佛跳墻起源于清朝末年，為福州“聚春園”名師鄭春發所創制，至今已有100多年的歷史。它采用多種精料精心煨制而成，程序復雜，各料互為滲透，味中有味，質地軟嫩脆潤、濃郁葷香，營養豐富，是福州傳統名菜之首。

Fujian Cuisine
