第四篇:水果大薈萃教學反思
“水果大薈萃”是《思維導圖》的第三課時,通過前面兩個課時的學習,同學們已經認識了大腦的結構,知道了不同的人大腦的思維方式是不同的,初步了解到思維導圖的結構,知道了思維導圖的的基礎上,讓孩子學會關于水果的思維導圖的繪制。
新課伊始,我們通過有趣的水果歌切入主題,一方面營造了輕松的氛圍,一方面又為本課時的學習做了鋪墊。接著,我們以蘋果為例,繪制了一個簡單的思維導圖,并相機介紹思維導圖的五個要素:中心圖像,關鍵詞,線條,顏色和圖片。接下來,我在每組發一張寫有“水果”的白紙,讓同組的孩子們共同繪制一幅思維導圖。
小組繪制思維導圖的過程中,一開始孩子們的思維受到了我們舉的例子的限制,僅僅局限在水果的顏色、形狀、用途上。在巡視的過程中,我突然發現有一個小組竟然想到了這種水果的英文名,于是我在班里做了提醒,孩子們的思路開始開闊起來,有的聯想到了與這種水果有關的動畫片、電影……看著他們想的越來越多,我心里滿是欣慰。
接下來是小組的展示活動,每個小組都有明確的分工,不再像初次那樣你推我我推你,整個過程都是流暢的。小組在交流中,都可以看出思維的發散,但在繪制的思維導圖中還是存在一些關于層次和顏色方面的欠缺。評價時,我試著放手先讓其他小組互評,我再補評的方式。
本節課中,小組的合作效果很明顯,尤其是平時在語文學科中暫時落后的同學,而在夢想課上,他們卻有著精彩的表現。這節課讓我真正明白了夢想課的意義,在這里,每個孩子都能找到自己的位置,發揮自己的作用,享受整個過程,不再做課堂的局外人,我想這就是夢想課所說的自信、從容、有尊嚴。此外,對于我個人而言,夢想課讓我敢于放手把課堂交給孩子,不像語文課上那樣,擔心放手后收不回來。

一個晚上,酒店中餐客人絡繹不絕,餐廳咨客忙著迎來送去,滿頭大汗。這時6位香港客人在一位小姐的引導下來到了二樓中餐廳。咨客馬上迎了過去,滿面笑容地說“歡迎光臨,請問小姐貴姓?”這位小姐邊走邊說:“我姓王”,“王小姐,請問您有沒有預訂?”“當然了,我們上午就電話預訂好了‘牡丹廳’。”咨客馬上查看賓客預訂單,發現確實有一位王的小姐在上午預訂了“牡丹廳”,于是咨客就迅速把這批客人帶進了“牡丹廳”。
過了半個小時,餐廳門口又來了一批人,共有12位客人,當領隊的王小姐報出自己昨天已經預訂了“牡丹廳”時,餐廳咨客發現出了問題,馬上查閱預定記錄,才發現原來今晚有兩位王姓小姐都預訂了廳房,而咨客在忙亂中將兩組客人安排進了同一間廳房。餐廳咨客為了補錯,立即就把客人帶到了“紫荊廳”,客人進房一看更加不滿意了。王小姐滿臉不高興地說:“我們預定的是一張12人臺,這是一張10人臺的廳房,我們12個人怎么坐得下?”王小姐不耐煩地徑直到“牡丹廳”一看,里面的客人已開席了,12人臺只坐了7個人,咨客看了看這么多的客人,為這不恰當的安排而再次賠禮道歉,但是這12位客人仍然怎么也不愿意坐進這間10人廳房。“你們這么大的酒店,居然連預訂都會搞錯,還開什么餐廳!同意了我的預訂就要兌現,我就要去牡丹廳,其它的廳房我都不去!今天我的客戶很重要,這樣讓我多沒面子,把你們的經理找來!”王小姐突然生氣起氣來。“十分抱歉,這是我們的工作失誤,這幾天預訂廳房的客人特別多,我們弄亂了,請你們先進房間入座,我們馬上給你們加位好嗎?”餐廳經理急忙過來好言好語地解釋。“我們這么多人坐得如此擁擠,讓我多么沒有面子!好像我宴請朋友非常小氣一樣。”“對不起,這是我們的錯誤,今天客人太多,請多多原諒。”看著這群饑餐渴飲的客人進了紫荊廳房,經理和咨客才松了一口氣,但看到這群客人坐得那么擁擠,咨客心里又過意不去,這正是因為自己工作失誤帶來的錯誤。
分析:
1、咨客應該在為客人預訂的時候把客人的中文全名和聯系電話記下來,在客人到達時咨客要先核對客人的全名和電話,再把客人帶到預定好的廳房就餐。
2、即使帶錯廳房也應盡量安排客人到座位數與人數相應的房間。
處理結果:
1、咨客與經理均對客人誠懇道歉。餐廳咨客為了補錯,立即把客人帶到了10人臺的廳房“紫荊廳”。
2、為客人提供額外的優惠,如送果盤、甜品、打折等,以此表達餐廳因為本身工作失誤給客人造成麻煩的歉疚之意。
3、再次當眾向王小姐一行客人表示歉意,使她在朋友們面前挽回面子,也充分讓客人感覺到他們是餐廳重要的客人。
4、以此事件作為經驗教訓,培訓全體員工,規范服務流程,務求所有員工明確顧客第一的意識。
案例二你們剛才點的就是這道菜
事情經過:
一天,趙先生在酒店的中餐廳請客戶吃飯。點菜時,有一位客戶點了一道“白灼基圍蝦”,但記菜名的服務員沒注意聽,把它誤寫為“美極基圍蝦”。
當菜端上來以后,趙先生感到很奇怪,立即把服務員叫來,清楚地表示:“小姐,我們要的是‘白灼基圍蝦’,這道菜你上錯了,請你趕快給我們換一下。”服務員一聽不樂意了,辯解說:“剛才這位先生點的就是‘美極基圍蝦’,肯定沒錯。不信把菜單拿來核對一下。”她的話把剛才點這道菜的客人弄得很不高興,趙先生的臉也沉下來了說:“請小姐把點菜單拿來給我們看一下吧。要是你錯了,得趕快給我們換。”服務員過去拿來點菜單,趙先生等人一看,上面果然寫的“美極基圍蝦”。這一下,大家都感到奇怪了。剛才位客人明明說的是“白灼基圍蝦”,大家都聽的很清楚,但現在怎么就成了“美極”了呢?那位服務員心里知道,自己當時一定是走神了,根本就沒聽清楚到底是“白灼”還是“美極”,但想到“美極基圍蝦”這道菜點的人多,想當然就記成“美極”了。可是,她害怕賠償,怎么也不肯主動承認是自己記錯了,還是指著菜單硬說客人當時點的就是“美極基圍蝦”,菜根本沒上錯。這時候,趙先生請的那位客人實在坐不住了,他有些氣憤地說:“把你們經理叫來,我有話對他(她)說。”
服務員極不情愿地去叫來了經理。這位經理大概已經聽服務員匯報了情況,他走過來后便說:“不好意思,你們剛才點的就是這道菜。我們店服務員都是經過嚴格考核和培訓的,記憶力都很好,在客人點菜時會如實地記下每一道菜名。。。”大家本以為這位經理回過來
賠禮道歉,把菜給換了,但沒想到他居然會說出這種話!經理這番話的意思很明顯:不是店方錯了,而是趙先生等客人錯了。事情到這種地步,完全沒有回旋的余地了。客人憤怒地拂袖而起,說道:“好吧,請你趕快給我們結賬吧!”趙先生見此情景,也覺得很是尷尬,勸也不是,不勸也不是。愣了一會之后,他才趕忙對那位客人賠不是說:“真對不起,請原諒!以后再也不到這種餐廳來吃飯了!”
分析:
1、在發生類似顧客投訴時,服務人員應明確要多站在顧客的立場為其設想,樹立“顧客至上”的意識,餐廳的服務使客人滿意才能有長遠的生意和對自己有長遠的幫助。所以在我方出錯時應首先誠懇認錯,然后承諾馬上給客人換成白灼基圍蝦,再報告上級,承認錯誤。
2、如服務員沒有做到位,經理出來面對客人時也應如此處理,并可以根據客人反應給予客人該道菜打折或者全單打折或者送果盤的優惠。
3、應關注餐廳的員工素質和服務素質,需加強培訓,采取適當的獎懲措施,防止以后再發生氣走顧客的事例。
處理結果:
1、餐廳經理出面賠禮道歉,把美極基圍蝦撤掉,讓廚房馬上做白灼基圍蝦,給客人換上。送上水果盤,并優惠打折以示歉意。
2、讓犯錯誤的服務員賠償撤掉的美極基圍蝦。
3、以此事作為經驗教訓,培訓全體員工,務求所有員工提高顧客服務意識。
案例十服務中的語言藝術
事情經過:
酒店餐廳午餐營業時間,一?來自臺灣的旅游團在此用餐。當服務員小孫發現一位70多歲的老年人的飯碗已是空了時,就輕步上前柔聲問到:“請問老先生,你還要飯嗎?”那位老先生搖了搖頭,小孫又問到;“那么老先生,你完了嗎?”只見那位先生冷笑起來:“小姐,我今天已經70多歲了,自食其力,這輩子還沒落到要飯的地步,怎么今個兒我倒要向你要飯了呢?我的身體還硬朗著呢,一下子不會完的!”小孫聽了客人的話感到很奇怪,心想,我問你要不要飯,意思是說要不要添加飯,你怎么把自己和乞丐聯系起來呢?小孫臉上不自然地笑了笑,對客人的不滿她不知何意。
分析:
1、服務人員要了解消費者遵守的風俗和習慣,在平時也應多觀察學習各地客人的忌諱和偏愛,在接待服務過程中注意避免說錯話,做錯事,否則會使消費者處于尷尬局面,或使其掃興,影響其對餐廳的印象。
2、服務員在工作中應該恰當地使用服務用語。這些服務用語是人們在特定的環境中總結歸
納而成的。在本案例中,服務員在為客人添飯時,本來是出于主動為客服務的熱心,但因所講的話不顧場合和對象,不符合禮貌服務用語之規范,因而在無意中傷害了客人,這是服務人員要盡量避免的。
處理結果:
1、小孫和經理向客人道歉。
2、管理人員批評教育了小孫,并以此事作為經驗教訓,培訓全體員工,務求所有員工提高服務意識和語言技巧。
